What We Meal Prepped This Week + The Best Containers January 27, 2021
New year, healthy us right? We have been hard core meal prepping for my husband this past month. Not so much for me since I’m still working from home, so I plan ahead my healthy lunches and just fix them each day. This past week, my husband LOVED the meal prep lunches we made. I guess we’ll make this until he gets burnt out. ha!
One thing that has made this SO extra easy are these containers that I found on Amazon!! Ya’ll…we absolutely LOVE these containers. I want them in some other colors! They also come in a single compartment & two compartment containers.
Here is what we cooked & packaged in each container.
– Grilled Chicken
– Squash, Zuchinni, & Onions
– Brown Rice
– Sweet Potatoes

(my husband said that these were like dessert so he eats them last. lol)
1. Heat your oven to 400 degrees
2. Peel the sweet potatoes then dice them in little squares
3. Put them in a baking dish (I used a large one so they cook evenly)
4. Season them with garlic powder, black pepper, cumin, & salt
5. Sprinkle a little bit of brown sugar on top (this is optional)
6. Drizzle BBQ sauce on top
7. Stir everything together & put in the oven. Cook until they are tender (approx. 30-45 minutes)

1. Slice the squash & zucchini into circles then cut into little squares (so diced)
2. Dice the onions
3. Toss all together in a bowl & season to your liking
4. We cooked on our Blackstone grill, but this can also be done in the skillet. For the skillet, put a little bit of olive oil in your pan. Add the veggies, and cook until it’s almost roasted-like.
5. For extra flavor we added, a little bit of a sesame teriyaki sauce but low-sodium soy sauce also works.
For the meal prep, we put brown rice in the large compartment with the veggies on top, sliced grilled chicken in the 1 cup compartment, and then the sweet potatoes in the second 1 cup compartment.
